Tortilla Soup With Beans And Rice

This is an easy thing to put together, and I’ll bet a lot of you have already done one version of this or another. The salsa can be used as a dip for chips or a topping for tostadas.

First make a salsa with the following FRESH ingredients chopped finely:

green bell pepper
salt and pepper
apple (optional)

Then have on hand the following:

fresh cooked pinto or black beans
fresh cooked rice
fresh white corn tortillas, cut in strips and fried crisp.

Put vegetable stock into a sauce pan along with the salsa. Add beans and rice. Heat to boiling and remove from heat. Allow to cool, then serve in bowls, add crispy tortilla strips and eat one delicious serving after another.

I will try this… My hubby will surely love this recipe… He loves salsa…
