Tomato,Basil and Hummus Sandwich

Ingredients (use vegan versions):

2 slices whole grain vegan bread
several slices of the best summer tomato you can find
fresh bazil leaves (a few, torn up)
tablespoon of hummus (I love the sun-dried tomato kind)
some fresh ground pepper
Directions:

Spread the 2 vegan bread slices with the hummus.

Slice the tomato and place on one vegan bread slice.

Spread the torn-up basil over the tomato slices.

Grind some pepper over that.

Cover with the other vegan bread slice.

Eat!

So tasty…so simple!

Note: you can also toast the vegan bread for a little crunch…and/or add some good lettuce.
