Tofu Questions

Here is my question:
Usually there is some ingredient used to make tofu from soy milk that separates the proteins from the liquid.
What happens when I leave the soy milk for a couple of days and it happens by itself? without any additional ingredient? Is this kind of tofu edible or it is already spoiled and should be thrown?

I think there a process to follow for soy milk to become tofu… There are some steps that are really sensitive so when your soy milk turns into tofu, i think soy milk is already spoil
