Sweetcorn soup Recipe

Ingredients 2-3 scoops/tablespoon of frozen sweetcorn
some water
1 onion
1 chilli (optional)
2 teaspoon plain flour
2 teaspoon milk
1 tablespoon cooking oil
fresh ground pepper
lemon juice
Instructions Place the frozen sweetcorn in a microwave bowl, add some water and cook in microwave on medium till tender.
Meantime, peel and chop onion into tiny pieces.
Warm cooking oil in saucepan, add finely chopped onion and cook till golden brown on medium heat.
Transfer most of the cooked sweetcorn (3/4s of it) to blender jar. Add plain flour, milk, chilli and some water. Blend till coarse/smooth depending on texture preferred.
Add the sweetcorn from the blender jar and the remaining (1/4) sweetcorn to the cooked onion in saucepan and stir in well.
Consistency of soup can be altered with addition of water.
Turn off heat.
Enjoy with sprinkle of fresh ground pepper (and dash of lemon juice).
