Sweet Potato And Chickpea Stew Recipe

Ingredients 1 large sweet potato (chopped in approx 1 1/2 cm pieces)
1 can chickpeas
2 chopped tomatoes
1/2 bag baby spinach leaves
1 finely chopped onion
1 clove minced garlic
1 tsp cumin seeds
1 tsp honey (to make vegan use another sweetener or omit altogether)
1 tbsp mustard
1 cup vegetable stock
1 tbsp tomato paste
Instructions 1. Saute onion in pan
2. Add sweet potato to pan
3. Add chickpeas
4. Add chopped tomatoes
5. Add honey (or not)
6. Add cumin seeds
7. Add garlic
8. Add mustard, tomato paste
9. Add vegetable stock
10. Simmer for approx 20-25 minutes until sweet potato is soft (mix every now and then so it doesn’t get stuck on the bottom of the pan)
11. After 20-25 minutes add salt and pepper to taste
12. Add baby spinach and mix around until wilted (approx 1 minute)
13. Enjoy!
