Ingredients (use vegan versions):
2 slices of multigrain vegan bread, toasted
salt and pepper
Toast the vegan bread, spread hummus on each side (I also like hummus on one side and dijon on the other) slice your veggies and spread em out–these are the veggies I like, but I’m sure mushrooms, tomatoes and peppers would be good, too. Shake a little salt and pepper over the whole thing and a touch of oil, too (of course these are optional–I just think it tastes a bit better this way).
