Smoked Almonds Dressing


* 1 clove garlic
* 1/2 cup smoked almonds
* 4 soft sun-dried tomatoes, chopped
* Handful fresh cilantro leaves
* Handful fresh mint leaves
* 3 tablespoons red wine vinegar
* Splash of water, 2 tablespoons
* 1/3 cup extra-virgin olive oil
* Black pepper

Add all of the ingredients except for the water and olive oil to the food processor and blend well. Use the water to thin the dressing out and add the olive oil last while it’s blending. Chill and serve over your favorite salad and enjoy.
