Ruby Grapefruit, Avovado and Pickled Red Onions with Baby Sp


        Grapefruit Mojo Dressing

      o 2 cloves garlic, minced
      o 6 T extra virgin olive oil
      o 1 t ground cumin
      o 1 cup fresh grapefruit juice
      o 1/2 cup fresh lemon juice
      o 1 T light miso
      o 1/2 jalapeno chile, seeded and minced
      o 2 t Sucanat
      o 3 T chopped fresh mint
      o 1/4 cup canola oil
      o Sea salt to taste
      o 1 T thinly shredded lemon basil or Italian basil (optional)


      o 12 oz / 340 g baby spinach leaves
      o 2 ruby grapefruit, peeled and sectioned (save some juice for dressing above)
      o 2 ripe but firm avocaados, pitted, and cut into thin slices
      o Lime-Pickled Onions (recipe follows)
      o Chile-Lime Toasted Almonds (recipe follows)
      o Julienned fresh mint, cilantro, or basil leaves for garnish (optional)

        Lime-Pickled Onions

      o 1 t minced lime zest
      o 1/2 cup fresh lime juice
      o 1 1/2 t sea salt
      o 2 red onions, cut into very thin rounds

        Chile-Lime Toasted Almonds

      o 3/4 cup slivered almonds
      o 1/4 cup fresh lime juice
      o 1 t mild chile powder
      o 1/4 t cayenne powder
      o 1/4 t sea salt 

Grapefruit Mojo Dressing

For oil-free version, substitute 4 oz / 115 g silken tofu for the oil, and dry-toast the garlic.

Saute the garlic in 2 T of the olive oil over medium heat until it browns, about 5 minutes. Remove from heat, add cumin, allow to cool. In blender, combine the garlic mixture with the grapefruit juice, lemon juice, miso, chile, Sucanat, and mint. Blend until incorporated. With the machine running, gradually add the remaining 4 T olive oil and the canola oil and blend until it thickens. Pour dressing into a bowl and add the salt and basil.


Toss the spinach leaves with enough dressing to coat, about 1/2 cup. Place equal portiokns of spinach in the center of each serving plate. Fan the grapefruit and avocado around the spinach and drizzle with dressing. Top the spinach with pickled onions and sprinkle with toasted almonds. Garnish with julienned herbs.

Lime-Pickled Onions

Makes 1/2 cup.

In a medium bowl, combine all the ingredients and let sit for at least 30 minutes before serving. Store in an airtight container in the refrigerator for up to 2 weeks.

Chile-Lime Toasted Almonds

Preheat oven to 350F/180C. In a small bowl, combine all the ingredients and toss. Spread almonds on a baking sheet and bake for 10-15 minutes, stirring every 5 minutes so they brown evenly. Let cool before using.

this is a very testy salad. but without sesame, fennel and dill powder is not perfect test.

Wow, it really tastes delicious. The ingredient listed here are pretty cool and it can actually add a wondrous flavour to this yummy salad dish. More than vinegar, I prefer to add some filament or little fresh lime juice drops. That makes me wow and crazy for salad. Apart from these even if you for vege- salads or chicken salad prefer olive oil some time rather than any other kind of oil. It is beneficial to the health.
