Potato and Leek soup Recipe

Ingredients -1 red onion
-3 large leeks
-5 medium-sized potatoes
-2 veg stock cubes
-3/4 cup of Milk
Instructions -Clean the leeks, chop them into thick circles, then chop into semi-circles

-Chop the whole onion

-Melt a tbl spoon of butter on the bottom of a large saucepan and throw in the chopped onion and leeks to sweat them. Put the lid on the saucepan and leave on medium-heat for 10 minutes, stirring a few times

-Peel the potatoes, cut them into quarters then add to the saucepan

-Pour boiling water to cover vegetables, crumble in veg stock cubes and add a little salt and pepper to taste

-Leave simmering on medium-heat for 2hrs stirring occasionally

-Use potato masher to mash up the soup ingredients as much as possible

-Add another tbl spoon of butter and the milk to thicken soup

-Blend soup completely until it has a thick creamy texture
