INGREDIENTS
o 2 cups boiling water
o 1 cup sugar
o 2 T grated lemon rind
o 1/3 cup fresh lemon juice
o Dash of salt
METHOD
Combine all ingredients, stir well. Let cool to room temperature. Pour into an 8 inch / 20 cm square baking dish; cover. Freeze at least 6 hours. Break frozen mixture into chumks. Place chunks in food processor; process until smooth.
