Holiday Spice Cookies

INGREDIENTS

      o 2/3 cup oil
      o 1 1/4 cup unrefined sugar
      o 2 T tahini and 8 T water, mixed thoroughly
      o 1 T vanilla 4 cups whole wheat pastry flour
      o 1 t baking soda
      o 4 t cinnamon
      o 1/4 t allspice
      o 1/8 t nutmeg
      o 1 cup raisins (soaked and drained) 

METHOD
In a large bowl, combine oil, sugar, tahini and water mixture and vanilla. Mix well.

In a separate bowl, sift the flour, baking soda and spices. Stir in raisins. Mix the dry mixture into the liquid mixture and stir to a smooth consistency. The batter should be fairly dry. Roll batter into small balls and form into cookies. Place on an oiled cookie sheet. Bake in a pre-heated oven at 350F/180C for 8-10 minutes until bottoms are slightly browned.

Yields about 3 dozen.

The recipe itself tastes very delicious! I wonder, when this cookies will get baked, it will smell so sweet and wonderful. I am crazy for cheese layer which you mentioned that we can add, I guess increases the softness in the cafe. Too much mouth-watering one! Also, I like vanilla and orange/ lemon flavour, but as this is something new, gonna surely try for it.
