Gazpacho Recipe

Ingredients 1- Spanish onion
1/2 kg- tomatoes
1- red medium capsicum
1- green medium capsicum
1- cucumber (peeled- optional)
1- clove of garlic
small dash of red wine vineger
herbs
1 litre- tomato juice
Instructions Chop finely or use food processor for, Spanish onion, tomatoes, red/ green capsicum, cucumber, and clove of garlic. (Depending on the size of your processor you might do this in stages.)

Pour in vinegar, and blend

add herbs and salt and pepper

place in fridge and chill for 2-3 hours, brings out more flavours.
