o 7 lb / 3.2 kg margarine o 2 quarts (2 1/4 L) plus 1 cup unrefined sugar o 4 T plus 2 1/2 t vanilla extract o 8 lb / 3.5 kg all-purpose flour
Preheat the oven to 400F/205C.
Cream the margarine and sugar until light and fluffy. Add the vanilla and flour. Mix well. Drop with a number 40 scoop on baking sheets and flatten with a fork. Bake for 10 to 12 minutes.
Makes 320 cookies.
