Date Loaf Recipe

Ingredients 1/2 cup of sugar
1 cup of chopped dates
2 tsp ground ginger
2 tsp mixed spice
1/2 tsp nutmeg
60gm / 2oz vegan margarine
1/2 tsp bicarbonate soda
1 cup of boiling water
1/2 cup of chopped walnuts
2 cups of self raising flour
Instructions Put into a mixing bowl the sugar, dates, spices, vegan margarine & bicarbonate soda. Add the water & mix to melt the margarine. Stir in the walnuts. Add the flour & mix well.
Pour into a greased & lined 20cm x 10cm /
8inch x 4inch loaf tin.
Bake in a 175c / 350f / gas 4 oven for
about 40min.
