Coconut Heaven Cake Recipe

Ingredients CAKE
1 cup plain flour
1/2 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 cup canola oil
1 cup lite coconut milk
2/3 cup sugar
1 tsp vanilla extract
1 cup shredded coconut

1/4 cup Nuttelex
1/4 cup lite coconut milk
1 tsp vanilla extract
2 cups icing sugar
1 cup shredded coconut
Instructions CAKE
Preheat oven to 180degrees. Grease cake tin. Sift the flour, baking powder, soda and salt. In another bowl combine the oil, coconut milk, sugar and vanilla. Pour the dry ingredients into the wet and mix until smooth. Fold in the cup of shredded coconut. Pour mixture into cake tin and bake for 30-40mins.

Cream Nuttelex until light and fluffy. Add coconut milk and vanilla and combine. Add the sifted icing sugar and mix until smooth. Add coconut and combine. Store in fridge until the cake is ready to ice.
