Coconut Burfi Recipe

Ingredients 2 Teaspoons ghee (or nuttelex)
1 cup sugar
1 cup water
1 cup finely grated fresh coconut or dessicated coconut
6 whole cardamons, crushed
1/4 cup cashew nuts, chopped
Instructions Grease a plate with ghee (or nuttelex)and set aside
Heat the sugar and water on low heat to make a thick syrup*
Remove any scum from the syrup. Add the coconut and cardamons, mix thorouhly
Turn off the heat while the mixture is still a thick pouring consistency. Add the cashews and mix thoroughly
Pour the mixture onto the greased plate and quickly spread with spatula
After a few minutes, cut into diamond shaped pieces with a sharp knife
Store in an airtight container
*make sure the syrup is very thick before you add the coconut and cardamon, otherwise it will not set
