Chunky Guacamole

Ingredients (use vegan versions):

2 avocados halved, seeded, peeled and finely chopped
1/4 cup minced onion
1/4 cup sliced green onion
2 Roma tomatoes, finely chopped (you may want to seed them), may use one large regular tomato
1 tablespoon olive oil
1 tablespoon lemon juice
salt to taste
Prepare the vegetables as stated above. Stir everything together and serve with tortilla chips or as a topping on haystacks (yummy veggie salad meal). You will not need to add the lemon juice if you serve immediately, it is to keep the avocados from turning dark. Whenever I share this dip, it is a hit and there is always someone in the group who cannot get enough of it!
