Ingredients 1 1/2 cups of SR flour (gluten free works also)
1 cup raw sugar
1/4 cup cocoa
1 tsp baking soda
1 tsp cinnamon
2 tsp vanilla extract/essence
1/2 cup vegetable oil
1/2-3/4 cup of cold water
1/2-3/4 cup of apple sauce (or small jar)
Instructions Preheat oven to 175 degrees celsius. Grease medium sized round cake tin with a little bit of olive oil, nuttelex etc.
Sift flour, cocoa, soda and cinnamon into a large bowl. Add the sugar and mix well. Add the wet ingredients, leaving water til last. Start with 1/2 cup - you may need to add more to get desired consistency.
Pour into greased cake tin and put in the oven. Unless you have a dodgy oven (like I do!) it should cook in 30-40 minutes. Longer if you use gluten free flour though.
ICING
Sift and mix small amounts of cocoa, icing sugar, vanilla extract/essence and hot water together until you achieve desired consistency.
Once cake is cooked, take out of the oven adn place on a wire rack to cool. Once cooled…ice (and decorate if you’re really bored)
