Capsicum-Carrot Soup Recipe

Ingredients 2 carrots
1 capsicum (any colour)
1/2 - 1 chilli depending on taste
1/2 - 1 clove garlic
pinch of salt
1 stem coriander leaf
Instructions Peel and chop carrots into pieces
Chop capsicum into pieces
Slit and deseed chilli
Peel and slice garlic
Place all ingredients in a microwave bowl, add some water and microwave till tender
Put this through blender and blend to coarse mixture
Add water depending on thickness of soup
Sprinkle finely chopped coriander
Sprinkle fresh ground pepper on top for aroma and add a dash of lemon juice
