Black garlic has double the anti-oxidants compared to garlic. Black garlic is cheap to make, easy to eat and cook with.
Steps to Make It
Gather 6 to 7 whole unpeeled garlic bulbs
Remove any dirt from the garlic bulbs by scrubbing gently with the rough side of a clean, unused sponge. (Do not remove cloves from the bulb nor wash the bulbs)
Set your slow cooker or rice cooker to warm. The warm setting is the right temperature and humidity for aging without cooking.
Place the garlic bulbs into the cooker. Do not overcrowd the bulbs.
Allow the bulbs to sit uninterrupted on the warm setting until the cloves are soft and black. (2 to 3 weeks)
When ready, take the bulbs out and store them in an airtight container for up to 3 months.
Enjoy!
