I make this for New Years for good luck. I don’t actually use measurements for this so these are approx guesses. Modify as needed.
2 cans black-eyed peas, drained and rinsed
2 tblsps olive oil
2 tblsps vegenaise
1 tblsp red wine vinegar
1 white onion, diced
1 small tomato, diced
2 celery stalks, diced
Combine all ingredients but the tomatoes. Mix well, add tomatoes and mix again. Refrigerate for 1 hour before serving.
