Ingredients 2 cups Rice Bubbles
1 cup amaranth
1 cup coconut
1 cup muesli
1/4 cup sesame seeds
1/4 cup pepitas
1/4 cup sunflower seeds
1/4 cup sultanas
1/4 cup dark choc chips
1/2 cup salted nuts (peanuts, macadamias, cashews etc)
1/4 cup linseed
6 red chinese dates, chopped roughly (or ¼ cup raisins)
150g margarine
1/2 cup rice malt/syrup
1/2 cup crunchy peanut butter
a little over 1/2 cup raw sugar
Instructions 1. Combine all ingredients, except choc bits, margarine, rice malt, peanut butter and sugar, in a large mixing bowl.

Bring margarine, rice malt, peanut butter and sugar to boil, stirring constantly.

Reduce heat slightly and allow to simmer for a couple of minutes, stirring constantly.

Pour onto other ingredients mix well. After about 20 seconds, add choc bits. mix.

Press mixture into rectangle plastic container, approx 25cm(L) x 15cm(W) x min 5cm (D).

Refrigerate for a few hours and then cut into squares or fingers.

Keep refrigerated until serving.
