o 2 cups sifted flour o 1 t baking powder o 1 cup margarine o 2 t vanilla extract o 3/4 cup sugar o 3 oz / 85 g ground almonds (or more)
Sift the flour and baking powder together and set aside.
Cream together the margarine and vanilla extract, and gradually add the sugar, creaming until fluffy. Mix in the ground almonds, and blend in dry ingredients in fourths. Shape dough into small balls about one inch in diameter. Place on cookie sheets. Press one whole almond onto the center of each cookie.
Bake at 325 F 20 to 25 minutes or until cookies are golden brown.
Remove to cooling racks to cool completely.
Makes about 3 dozen cookies.
