Creamy Cilantro


* 2 green onions
* 3/4 cup loosely packed cilantro leaves
* 2 garlic cloves, minced
* 2 teaspoons sesame oil
* 2 teaspoons reduced-sodium soy sauce
* 1/2 to 3/4 teaspoon crushed red pepper flakes
* 1/2 teaspoon salt
* 10 ounces soft tofu, drained and crumbled (1-1/4 cups)
* 1/2 cup rice vinegar 

All of the ingredients should be blended together except for one of the green onions. Slice this onion thinly and set it aside until the dressing is well-blended. Stir the sliced onion into the final product and chill it in the refrigerator for at least one hour. Letting it sit in the fridge will only enhance the taste, so for best results let the flavors marinate at least a day before using.
