Ingredients 1 cup wholemeal SR flour
1 cup desicated coconut
1 cup raw sugar
1 cup soy milk
Instructions Stir together all ingredients, put into a lined loaf tin and cook at 160 deg for 30-40 mins. Insert a knife, if it comes out clean it��s cooked. Beautiful served warm or cold with icecream or just with a coffee.
Works really well if you double the quantities for a bigger cake.
You can add 1/2 cup sultanas for a variation.
