Capsicum & Corn Soup Recipe

Ingredients 2 capsicums
1 tablespoon frozen corn
1 onion
1 red chilli
2 teaspoon plain flour
2 teaspoon cooking oil
vegetable stock (liquid from supermarket)
small amount of milk/cream
Instructions Wash and deseed capsicums.
Dice the capsicums.
Peel and chop the onion finely.
Add chopped onion, chopped chilli and capsicum to pan of warm cooking oil.
Stir fry for a while.
Add frozen corn and to pan and cook all the vegetables until tender.
Cook on medium in a saucepan.
Add plain flour and vegetable stock gradually to avoid forming lumps.
Add water gradually and stir gently
Transfer half the portion to a blender jar and blend till smooth.
Return puree to soup in saucepan, add some milk or cream
Stir gently and warm the soup
Enjoy soup with dash of fresh pepper on top
